Recipes From the “Best” Bed and Breakfast in Tucson

Casserole, Southwest Breakfast

Serves 6
41/2 cups - frozen hash brown potatoes, shredded
11/8 cups - Monterey Jack cheese, shredded
1 - Jalapeno peper, diced
1 - sweet red pepper, diced
3/8cup - green onions, sliced or
(  3 - green onions, sliced)
6 - eggs, beaten
1/2 12 oz. can - evaporated milk
3/8 teaspoon - pepper, freshly ground
1/4 teaspoon - salt
  • Preheat oven to 350o
  • Grease a 3-quart baking dish.
  • Arrange the potatoes evenly in the bottom of the dish.
  • Sprinkle with cheese, jalapeno pepper, red pepper and green onions.
  • In a medium mixing bowl combine eggs, milk, pepper, and salt.
  • Pour the egg mixture over potato mixture in dish.
  • Bake, uncovered, for 60 minutes or till center appears set.
  • Let stand 5 minutes before serving
